Description
Intense and refreshing aromas with citrus air of grapefruit, tropical fruit and subtle notes of stewed fruit. Notes of white and yellow flowers emerge, enveloped by the pastry fragrances contributed by yeast autolysis.
On the palate, it is fresh, lively and vibrant. It has a fresh entry and good acidity, elegantly accompanied by the crisp sensations of bubble burst as it passes through the mouth. The aftertaste brings back citrus, tropical notes, and raw nuts. The finish is fine and long, with good roundness and no rough edges
Pairing
Perfectly pairs with all types of seafood, shellfish, lightly seasoned fish, or Asian cuisine. Ideal for fatty cheeses that pair beautifully with Montònega's acidity.

Harvest: Hand-picked, mid-October 2022.
Winemaking
Ancestral Method tirage with the grapes' natural sugars.
Maceration for 8 hours at 15ºC.
Fermentation and maceration at low temperatures.
Aging: Fermentation in stainless steel
